200gr oranges peeled (you can include some peel if you choose but Mum doesn't)
1 large egg
50gr melted butter
1 tsp baking powder
1tsp baking soda
.5C sultana or dates or walnuts or almonds (Mum uses almonds)
Cut oranges into wedges and process with sugar until finely chopped. Add egg, milk, and btter and blend. Sift dry ingredients into a bowl. Add orange mixture and fruit/nuts. Mix LIGHTLY. [b]DO NOT OVERMIX[/b]
Bake at 200oC in lightly greased muffin tins for 12 - 15 minutes or 9 - 10 minutes for mini muffins. Leave in tins for a few minutes, then tip onto a rack to cool.
Dust with icing sugar or split and fill with cream.
